Healthy “Tootsy” Rolls
Everybody loves Tootsie Rolls, but they are loaded with sugar and other not so healthy ingredients. Here is a recipe for some natural ones that you can make at home. Great for Halloween or Stocking Stuffers!
Make only 1 batch at a time in the food processor – this mixture is VERY thick and makes it almost impossible to work with if you make more than one batch at a time.
1 Cup raw cocoa powder – You can use any cocoa powder unless you are going for totally raw, carob powder could also be used
1/2 Cup mesquite powder – This is what gives it the unique flavor – mesquite flour is very good for blood sugar issues also
1/2 Cup almond butter – Any nut butter will work – one of my customers used cashew/macadamia – experimentation is fun!
3/4 Cup honey or agave nectar – (original recipe calls for a mix of both) – see what you like!
2 T. Fo-Ti – I didn’t use this when I made them, it is a Chinese herb, up to you if you would like to add or not
2 heaping Tablespoons of lucuma powder – Lucuma is also called Monk fruit. Now most monk fruit is mixed with Erythritol, but you can find it by itself. It is more expansive. This gives it a nice texture and sweetness -but not too sweet.
1 Tbsp vanilla
1 pinch of sea salt
Process in food processor till well blended – it is very stiff – stir down as needed and place into bowl and knead in more lucuma (several Tbsp.) till no longer sticky
Roll into logs and wrap in wax/parchment paper – store in freezer or fridge
