Quick Low carb Chili
Quick Tasty Chili
I love this chili! I always make a big batch and have it to easily warm up for lunch or a cozy dinner when it is cold out. It freezes well so you can double or triple it. Ground turkey, pork or chicken can be substituted for the ground beef, and often I mix 2 meats. The list of ingredients might seem long but once you brown the meat, you add all the other ingredients either in a pot, crock pot or instapot to finish cooking and let the flavors meld. The recipe is very forgiving so feel free to change up the spice amounts to what works best for your taste buds. I prefer to dump all the ingredients into a crock pot and it warms up the house and my tummy at dinner! This recipe serves 4.
Ingredients:
2 TBSP extra virgin olive oil
1 small onion or ½ half of a larger onion, medium dice
1 TBSP minced garlic, fresh or from a jar - depending on your liking of garlic
1 lb ground beef - I like to brown it to make it crispier - I liked to mix ground beef and ground pork
½ TBSP chili powder or more to your taste
½ tsp ground cumin
1 TBSP smoked chipotle powder (optional) - this is too spicy for some -but it is very flavorful also, so adding in 1 tsp would be good for those not liking too much heat
Pinch of pink Himalayan salt and black peppercorns to your taste
1 ½ cup organic beef bone broth - bone broth makes it extra healthy, but any broth will do
2 cups riced cauliflower - I use a package of frozen riced cauliflower from Costco
1 medium tomato, diced
4 teaspoons of tomato paste
Fresh cilantro, for garnish
Preparation:
1. Preheat oven to 325 F.
2. Heat olive oil in a heavy, oven-proof pot over medium high heat. Add onion and sauté until soft.
3. Add ground beef to the skillet and sauté until the meat is almost browned. Then add spices, salt and pepper and continue to sauté until the meat is nicely browned.
4. Stir in the diced tomato, beef broth and tomato paste. Add the riced cauliflower and give the ingredients a good stir to incorporate them all. Bring to a boil and then turn down to simmer to reduce excess liquid to your liking.
5. This can be made in an instapot also when in a time crunch. Serve while hot. This recipe freezes well.
