Wheat-Free & Sugar-Free Muffin Recipe

2 cups spelt flour
3/4 cup Xylitol
1 tsp baking powder
1 tsp baking soda
1 cup organic sour cream - or one package of SoyCo Rice Sour Cream - with oat milk added to fill to one cup
2 eggs
1/2 cup olive oil

Here you can add blueberrys, other fruits or nuts or to make poppy seed muffins:
1/2 tsp vanilla flavoring
1/3 tsp almond flavoring
3 Tbsp poppy seeds

Bake in 400 degree oven for 12 minutes in muffin pan. Let cool before serving.
